I have a Canon Rebel Camera EOS and in the manual mode it will only go to Shutter Speed 30 and then automatically goes into "bulb" mode–why? How do I get this "bulb" mode shut off so I can move my shutter speeds beyond 30?

The canon rebels have a maximum shutter speed of 30 seconds (shown by a 30")
So anytime you are trying to shoot a photo for longer than 30 seconds you will have to do it in bulb mode or change another setting (aperture, iso) to allow for a faster shutter time

There is plenty of ways to circumvent this issue, read blogs and personnal pages about astrophotography related to Canon Digital Rebel aka 300d. There is ways to achieve bulb mode over 30 seconds.
